Trinbagonians talk. (38) Mayonnaise --- Potato Salad

Ah remember when ah was growin’-up in Trinbago we use to call Potato Salad --- Mayonnaise. So, when a Trinbagonian ask yuh if yuh want Mayonnaise, dey mean Potato Salad. Dis is how ah does make meh Mayonnaise--- Potato Salad. INGREDIENTS: 8 Potatoes,     1 C. Peas an’ Carrots,     Cut up a little Onion,     Honey or Sweetened Condensed Milk,  2 tbs. Mustard,     Mayonnaise. PREPARATION: Wash de Potatoes, boil dem until dey cook den cut it up an’ put it in a bowl.     Drizzle Honey or Condensed Milk over de potato den mix.     Add Peas an’ Carrots,     Add Onion     Mayonnaise,     Mustard an’ den mix it up. Taste it den cover de bowl wit Plastic wrap an’ den put it in de fridge.

So, when a Trinidadian and Tobagonian ask you if you want some Mayonnaise, they mean Potato Salad. This is how I make my Mayonnaise--- Potato Salad. INGREDIENTS: 8 Potatoes,     1 C. Peas and Carrots,     1 small Onion diced,     Honey or Sweetened Condensed Milk,  2 tbs. Mustard,     Mayonnaise. PREPARATION: Wash Potatoes, boil until tender then cut up and put in a bowl.     Drizzle some Honey or Condensed Milk over potato then mix.     Add Peas and Carrots,     Onion     Mayonnaise,     Mustard then mix. Do a Taste test then Cover the bowl with Plastic wrap. Refrigerate.
