Trinbagonians talk. (37) My Sweet Bread

 Ah love to eat Sweet Bread wit’ Butter or wit’ Cheese an’ a Cup of Tea. Dis is how ah does make meh Sweet Bread. INGREDIENTS: 1 Coconut,     1 C. Sugar,     1 tbs. Bakin’ Powder,     3/4 C. Water,     2 tsp. Home-made Vanilla, (De Recipe for Home-made Vanilla is  Trinbagonians talk. (36)  on meh  Blog.)   1 Egg,     3 C. Flour,     ½ C.  Margarine,     1 tsp. Angostura Bitters,     1 C. Cherries,     1 C. Mixed Peel,     1 C. Rasins.     PREPARATION: Cut up Mixed Peel an’ Cherries den put in separate bowls.     Crack de Coconut, drain out de water in a glass an’ drink. Next, break de coconut in pieces, take de meat off of de shell an’ wash it. Cut de coconut in smaller pieces, put it in de blender.     Pour de water in de blender an’ blend. Put blend Coconut in a bowl.     Add Sugar an’ mix.     Mix in egg, Vanilla, Bitters den Margarine.     Sift flour an’ Bakin’ powder den add to Mixture. Mix in Cherries, Mixed Peel an’ Raisins.  Pour batter in a Bakin’ Pan an’ bake at 350°F for 1 hour.
